Biriyani Recipe

Homemade Biriyani Recipe

Ingredients:

2 cups Basmati Rice (aged for better results)
500g of your choice of meat (chicken, lamb, or beef), cut into pieces
1 cup yogurt
Biriyani Masala (see recipe below)
1 cup sliced onions
1 cup cooking oil or ghee
Saffron strands soaked in warm milk
Fresh coriander and mint leaves for garnish
Salt to taste

Biriyani Masala:

4-5 green cardamom pods
4-5 cloves
2-inch cinnamon stick
1 teaspoon black peppercorns
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 black cardamom pods
1 bay leaf

Process

Step 1: Let the meat marinate

Combine the meat chunks, yogurt, and a generous amount of Biryani Masala in a bowl.
Make sure the aromas seep into the meat by letting it marinade for at least two hours.

Step 2: Make the masala biryani.

In a dry pan, toast the black cardamom, cloves, cinnamon, black peppercorns, cumin seeds, fennel seeds, and bay leaf until fragrant.
Toasted spices should be ground into a fine powder. This is the Biryani Masala you created yourself.

Step 3: Wash and Allow Basmati Rice to Soak
To get rid of extra starch, properly wash the basmati rice.
Give the rice a half-hour to one-hour soak in water.

Step 4: Cook the basmati Rice

Heat the water in a big pot until it boils.
Stir in the moistened Basmati rice and salt.

Step 5: Fry the onions.

Heat up some oil or ghee in a different pan.
Onions should be sautéed till golden brown.

Step 6: The Biryani’s Layering

Layer the marinated meat first in a pot with a thick bottom.
Cover the meat with a layer of half-cooked Basmati rice.
Pour milk infused with saffron over the rice.
Until all of the ingredients are utilized, keep layering.

Step 7: Unintentional Cooking

Make a tight seal by using flour dough to seal the pot’s edges.
Cook for 20 to 25 minutes on low heat to let the flavors mingle.

Step 8: Present and Garnish

Reveal your masterpiece of biryani.
Add mint leaves and fresh coriander as garnishes.
Serve hot with your preferred side dish or with cucumber raita. Savor the wonderful pleasure of your handmade biryani!
