Ingredients:

2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
2 cans of whole peeled tomatoes (28 oz each)

1/2 teaspoon dried oregano
Salt and pepper, to taste
1/2 cup heavy cream (optional)
Instructions:

In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and garlic and cook until soft and translucent, about 5 minutes.

Add the canned tomatoes (including their juices), chicken or vegetable broth, sugar, basil, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.

Use an immersion blender or transfer the soup to a blender or food processor and puree until smooth.

Return the soup to the pot and stir in the heavy cream, if using. Heat the soup until warmed through.

Serve hot with croutons, fresh herbs, or a drizzle of olive oil, if desired.
