#Carrot and Ginger Soup

Carrot and Ginger Soup: This soup is a perfect combination of sweet and spicy, with the sweetness of carrots balanced by the heat of ginger.

Carrot and Ginger Soup


1 lb (450 g) carrots, peeled and chopped
1 medium onion, chopped
2 cloves garlic, minced
4 cups (1 liter) vegetable or chicken broth
1 tsp dried thyme
Salt and pepper, to taste
2 tbsp olive oil
1/2 cup (120 ml) heavy cream (optional)
Fresh parsley or cilantro, chopped (optional)

In a large pot, heat olive oil over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 3-4 minutes.

Add the chopped carrots, thyme, salt, and pepper. Stir well and cook for another 5-7 minutes, stirring occasionally.

Add the broth to the pot and bring to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the carrots are soft and tender.

Remove the pot from heat and let it cool for a few minutes. Use an immersion blender or transfer the soup to a blender in batches and blend until smooth.

Return the soup to the pot and heat it over low heat. If desired, stir in the heavy cream to make it creamier. Cook for another 2-3 minutes, stirring occasionally.

Serve hot, garnished with fresh parsley or cilantro if desired.
