Here’s a simple recipe for making a veggie omelet

Ingredients:

2-3 eggs
Salt and pepper
1 tablespoon butter or oil
Chopped vegetables (such as bell peppers, onions, mushrooms, spinach, or tomatoes)
Grated cheese (optional)
Instructions:

In a small bowl, whisk together the eggs, salt, and pepper until well combined.
Heat the butter or oil in a non-stick skillet over medium heat.
Add the chopped vegetables to the skillet and sauté until they are tender and slightly browned, about 5-7 minutes.
Pour the egg mixture over the vegetables in the skillet.
Use a spatula to gently lift the edges of the omelet and let the uncooked egg run underneath until the egg is mostly set but still slightly runny on top.
Sprinkle the grated cheese on one half of the omelet (if using).
Use the spatula to fold the other half of the omelet over the cheese.
Cook for another 1-2 minutes, until the cheese is melted and the egg is cooked through.
Slide the omelet onto a plate and serve hot.
